Before cars, batheeth was the caravan's provision: flour is toasted gently until golden, kneaded with mashed pitted dates, ghee and a little cardamom and ginger, then rolled into small balls kept in cloth pouches. It does not spoil in the heat, and one handful fuels a day's walk. Bedouin families still serve it at gatherings and carry it on hunting trips.
